Fruit is sourced from Oliver’s Vineyard, McLaren Vale. Production was 430 dozen
Grapes were harvested in the cool evening and gently pressed with minimal skin contact. Partly fermented in old barrels to give a textural element and another layer of complexity. Tank and barrel components combined at the end of ferment with no extended lees contact.
