Variety: 100% Shiraz
Colour: Dark purple with red hues
Aromatics: Floral perfumed nose, with fresh red berry and cherry fruit and hints of earthiness and spice.
Palate: Fresh red and blue berry fruit combine with fragrant spice and a fresh line of acid. The wine has a textural mouth-feel and a fine and lingering tannin structure.
Cellaring: Will reward cellaring for 5-7 years or more.
Food Match: Organic lamb racks with sweet potato mash.
Vineyard Notes: Clarendon is an elevated site within the McLaren Vale wine region, recognised for its exceptional quality and purity of fruit. The fruit was sourced exclusively from the Hickinbotham Block 126, rows 8 – 16.
Winemaker Notes: Hand picked and 30% of the single vineyard fruit was included into the ferment as whole bunches. Matured partly in large format 500L Puncheons and the remainder in 300L Hogsheads for 15 months. 100% French oak 10% new, the remainder consisting of 2nd and 3rd use barrels.
